Pinot Noir 2020
Pinot Noir was hand picked and 100% destemmed, cold soaked for 4 days allowed to warm naturally with fermentation maxing out at 30 degrees. Gentle daily punch downs fermented dry on skins approximately one week post maceration on skins. Pressed off to 225l barriques with a total of 15% new oak.
The wine is pale ruby, this wine is light in colour and we made the decision not to add any other varieties to keep Pinotcity within the wine. A racy line of acidity is forefront backed alongside savoury spice with integrated supporting oak. Red cherry is bright and lifted on the palate balanced with wild strawberry and savoury elements of thyme and freshly grated nutmeg.
